Bright City Bruschetta

 One of my family's favorite things to do, especially in the Summer, is entertain. Recently, I was cooking a meal that was taking a bit longer than originally planned (crockpot problems). I decided to make a quick appetizer to hold us over until it was finished by mixing ingredients we already had in our kitchen. The end result: my own little version of bruschetta. Pat named it "Bright City Bruschetta" and the name seemed only fitting. I made a batch for my family while at home and wanted to share it with all of you - I hope you will enjoy! The full recipe is included below. xx

French or sour dough bread
1/2 Avocado
1/2 Tomato
Olive Oil
Lime Juice
Makes 8, serves 3-4

Slice the bread into thick pieces and place in the toaster (if desired). Cut up the avocado, tomato and cilantro. Mix together and place on top of the bread. Add a squeeze of lime juice on top of each piece  of bread and an olive oil drizzle. I also like to add a bit of feta cheese if I have some in the kitchen. Eat up and enjoy - cheers!
