Homemade Maple Granola

1/4 cup flaxseeds
6 cups old-fashioned oats
2 cups raw sliced almonds
1 cup pumpkin seeds(not roasted)
1/2 cup sunflower seeds (not roasted)
3/4 cup vegetable oil
3/4 maple syrup
(Makes about 10 cups)

1. Preheat oven to 350 degrees.
2.Stir flax seeds, oats, almonds, pumpkin seeds, sunflower seeds, oil, and syrup in a large bowl.
3. Spread mixture evenly in 2 large shallow baking pans and bake in upper and lower thirds of oven for thirty minutes, or until golden brown.
4. Stir halfway through baking.
4. Cool granola completely while still on pans.

One of my favorite things to do with my mom is cook and learn new recipe's. Since I was a little girl, she has always inspired me to make things from scratch.The idea of something being fresh, rather than store bought is just that much better (and healthier!) This recipe is one of my current favorite's that she has shared with me. The granola can be kept in at room temperature for a week, or frozen up to one month. I especially love this because you can make a large batch ahead of time and then have a snack ready for any time of the day. Even better, bring it to work, mix in some oatmeal, berries, and your in heaven - trust me. Have a wonderful mother's day weekend, my love's! xx
